Weekend Brunch, Solved

January 17, 2010

Rough night last night? Yeah, me too. After nights like that, my stomach always wakes up screeching “FEED ME.” Man, it is so tempting to head to a brunch place and get a bloody and an omelet and some hash browns… and biscuits and gravy… and grits. ….OK, and maybe a waffle with berry sauce.

But resist, sisters! There’s an answer. Friday, make sure to stock your house with these essentials: eggs, lite sliced cheese (I like reduced fat sharp cheddar), english muffins, a tomato and balsamic vinaigrette. And now, I will tell you about the best low fat breakfast sandwich known to hungover skinny bitches.

Whip up three egg whites with salt and pepper, add chili powder if you like it hot. Cook it up either as an omelet or scrambie eggs. Pop half an english muffin in the toaster or toaster oven or whatever you got. Splash some balsamic vinaigrette on that muffin, top with a slice of tomato, then of cheese and then your eggs. Always add hot sauce. There you have it! A 4 point* breakfast and so simple you can even do it with a soul-crushing hangover (I’ve tested this theory).

Editor’s Note: There is no substitute for a good Bloody Mary – Keep that stuff in your house too, so you wont be tempted to go grab one somewhere with greasy deliciousness.

*On the WW scale. The equivalent of about 180 calories since its got some higher fat items
